Chickpeas is rich in proteins and represent a good alternative to eggs, for eg you can use their can's water (aquafaba) to make delicious chocolat mousse !
Organise a blind test they will not see the difference !
Let's cook !
For one omelet or 2 portions of scrambled eggs :
50g chickpea flour
1 Tbsp of oil (olive or sunflower for eg)
2 tsp of nutritional yeast
200 g water
1/4 of vegetal cube
Mix the chickpea flour, nutritional yeast and oil
Boil the water with the vegetal cube and pour it slowly, in order to avoid lump, while mixing
Pour the mixture on a hot pan, with some oil eventually, and let it cook 6-7 min until the bottom get a nice golden color.
This omelet is a bit more fragile, therefore a bit harder to fold, be delicate and ENJOY !
